Why 6:00 on your watch can still read 30:18
A 5K course is measured along the shortest line a runner could take. Real runs are longer: going wide round bends and weaving past people adds distance, and it is normal for your watch to show 1 to 2 percent more than 5 km at the finish.
Hold exactly 6:00/km and cover 1% extra: 30:18. Every kilometre on target, and still over 30.
Hold 5:55/km and cover the same 1% extra: 29:53.
On a parkrun or a road 5K, run about 5:55/km on the watch and the extra distance stops mattering.

Where sub 30 usually goes
In the first 400 metres, run at 5:15 because everyone around you is, and in the third kilometre, which is where most 5Ks are lost: far enough in to hurt, too far from the finish to use it. If you are on pace at 3 km, the last two take care of themselves more often than not.
